23 March 2008 - Easter







Today is Easter Sunday. Jim and I are still recovering from a fun night out on Friday with Matt and Millie. We went into Atlanta to see Robinella at Eddie's Attic. She is an amazing singer songwriter that is a cross between Billie Holiday and Dolly Parton. Southern and amazing from start to finish! We had a blast but went out afterwards and did not get home until around 3 a.m. So, Easter has been a slow day, but that's not a bad thing I suppose. Easter weekend has always been a little odd for me, especially as a child. I don't know what it is, but it centers around guilt I guess. After all, Jesus died for our sins, and I remember all of the movies that came on about the crucifixion and resurrection. Upon retrospect, I really don't think it was appropriate subject matter for small children. Oh well, as an adult, I'm just left with Jesus and Gravity...

So, I am cooking an Easter Sunday Supper tonight. Here's a photo of me and my siblings one Easter long ago. Sad tohttp://www.blogger.com/img/gl.link.gif realize there are only three of us left and no resurrections to celebrate. But alas, the skin on my roasted chicken was extremely crispy, and that's all I need right now!

The menu:

- Extra Crispy Roasted Organic Chicken

- Roasted Fingerling Potatoes With Garlic and Fresh Rosemary

- Baby Carrots and Fresh Sweet Peas

- Salt and Pepper Cream Biscuits

- Homemade Key Lime Pie

What a delicious Easter dinner. A very weird holiday for me also since I really don't practice Christianity. And, Publix was closed so I had to go to Ingles for Tide, gum and cat litter. I usually don't shop at Ingles. Although, they do have the self check-out which I think is fun.

Anyway, when I tasted the crispy skin chicken I was transported to Zunu Cafe in San Francisco. Bill, how did you get the chicken so crispy? It probably was the biscuits that transported me as they were so light and fluffy that I had to hold them down with a finger so they wouldn't float away.

The key lime pie was also delicious. The best crust bill has ever made.

So, weird Easter Sunday is almost over.

why thank you jim! i think you mean Zuni Café in SF? the secret to the extra crispy skin is threefold: first, you completely separate the skin from the chicken by cutting a couple of holes in the skin and slipping a handle from a wooden spoon bewteen the flesh and skin; afterwards, you rub the chicken with a mix of kosher salt, pepper and the secret ingredient, baking powder! finally, you place the bird in the fridge to air dry for twenty-four hours, and there you have it!

Dinner looked Yummy!!! Matt and I had a little Easter breakfast at home and then I went to Chatsworth to visit my mom. Matt stayed behind to make fabulous art.. I also visited my Nonnie & Paw, they were excited to see me as I was them too. I stopped in to visit Dad, Regina and my beautiful neices and nephew. Gracie (the oldest) had me stay and watch Enchanted with her and she showed off her kartwheeling abilities, while Mollie just wanted to snuggle with her aunt MiMi.... It was a nice visit home

Dinner looked fabulous! We were in Grand Forks with Bob's family. It was a fun day all in all. For me Easter is a hopeful day...in the midst of my conflicted heart about all the details, I still think it resounds with hope...maybe living in this "neck of the woods" where we see signs of life in the spring (well, not really this year as we got 8 inches of snow on Friday so no green springs poking up)...bet your key lime pie was delicious...and the biscuits...I'm pretending I can taste them.

Great comments Tonya. Perhaps we should dwell on hope and Spring instead of death and religion. Hope the snow is over soon. Jim just went to the bank this morning and texted me, "it's snowing!" A little snowflake in Georgia excites and delights. The key lime pie was off-the-charts! It was so rich, I could not even finish my slice. I would have posted a photo, but Jim inadvertently discarded my sugared. paper thin lime slices that were to be used for the garnish! And if those biscuits do not give one hope, then nothing will. They were divine - lots of Jesus but no gravity! They were too light and fluffy for that!!!
